These fillable bacon cups are quick and easy to make. For each bacon cup, you will need thinly sliced bacon. To make six bacon cups, you will need eighteen slices of bacon. Don't forget to place a muffin tin on a baking sheet with a lip to catch the bacon drippings.

Equipment
  • Non-stick standard-size muffin/cupcake tin
  • Baking sheet with a lip
INGREDIENTS
  • Three slices of thin bacon per baking cup
DIRECTIONS
Preheat oven to 390F / 200C.  Cook time is about 20 minutes until nice and crispy. The rest time is five to ten minutes before you can fill them with your favorite filling.
Take your muffin tin and turn it upside down. Take two slices of bacon and cut them in half. This will become the bottom of the cup. 
Take the two halved slices and lay them on the bottom of the tin in the same direction parallel to each other.  Take another two half-slices and lay them in the opposite direction on the bottom of the tin.
Take the third slice that is not cut and wrap it around the base to create the sides of the bacon cup. You might need a toothpick to secure it all together and close it if needed.
Repeat for each bacon cup you want to make.
Bake in the oven until crisp - about 20 minutes.
After the bacon is crisp, remove from the oven and let it stand for 5 to 10 minutes, while still on the tin.  The bacon will cool and become firm and keep its shape.
BACON CUP FILLING IDEAS
  • Fill with your favorites like lettuce, tomatoes, avocado, onions, a little guacamole.
  • You can also make ground beef with or without seasonings like taco, greek, or Italian seasoning and add a little cheese on top. Melt the cheese in the oven under a broiler or in the microwave.
  • Chicken or tuna salad
  • Eggs scrambled, poached, or an omelet.  Add your favorite toppings.
  • For something different, fill it with low-carb ice cream.
