Rich, classic sausage gravy. Only 2 carbs and perfect over my 99 second low-carb bread.

Ingredients
  

  • 1 lb Pork Breakfast Sausage Make sure there's no added sugar
  • 1 1/4 cups Heavy Cream
  • 2 1/2 oz Cream Cheese Softened (Optionally cubed)
  • 1 tsp Salt General guide - salt to taste
  • 1/2 tsp Pepper Use 1/2 the amount you used of salt. Fresh Cracked is black pepper is best.
  • 1 pinch Sage Optional
  • 1 pinch Onion Powder Optional

Equipment

  • 1 Skillet I use stainless steel. Cast iron works well too.
  • 1 Spatula I use a wooden spatula
  • 1 Measuring Cup 1 cup or larger

Method
 

  1. Brown the sausage in a skillet over medium heat, breaking it into crumbles.
  2. If sausage is not already seasoned, add salt and pepper to taste.
  3. Remove the sausage temporarily, but do not drain the fat from the pan.
  4. Reduce heat to medium-low. Add heavy cream and stir to combine.
  5. Add 1 cup cream cheese in chunks and stir until fully melted and smooth. You can cut into chunks, or just rip the cream cheese into large pieces.
  6. Season with black pepper and salt. Adjust to taste.
  7. Add the sausage back to the skillet and simmer until warm.
  8. Add some or all of the last 1/4 cup of heavy cream to get the gravy to the texture you like.
